In Charleston, where fried seafood is sacred, my choice is to head over for a visit with Sanra and Terry McCray at Dave’s Carry-Out. No heat lamps here. Your flounder, shrimp, or whiting has a crackly, crunchy crust that is perfectly fried to a golden brown and served.
Their fried flounder is an icon of Charleston’s food culture. Folks tell me it's as heroic as the Holy City’s shrimp and grits or she-crab soup.
