It was decades ago when I first arrived in Beaufort - no waterfront park, Dataw Island was only a dream, and the YMCA was still on the drawing board. I had never eaten a raw oyster, but it didn’t take long to figure out that in this town, oysters are the crown jewels of seafood. Once I experienced a true Lowcountry Oyster Roast, I was hooked forever. Now, I have an oyster knife in the glove box of my car, just in case. 

It’s a certain right of passage to be able to open one and slurp it down while armed with an ice-cold beer.
